The dosa is a South Indian delicacy and is basically a crepe made from rice and split urad dal. Its is typically eaten for breakfast or dinner and is rich in carbohydrates and protein. Regular dosa batter as mentioned before is made from rice and split urad dal blended and is left to ferment overnight. A variation of dosa is rava dosa that is made using rava or sooji or semolina, rice flour and maida or all-purpose flour. It can be served with sambar, chutney,indian pickle and podis. Ingredients: 1 cup rava or sooji or semolina 1 cup rice flour 1/2 cup maida or all-purpose flour 1-2 green chillies chopped (to taste) 1 inch ginger peeled and chopped 1-2 tsps jeera or cumin seeds 1 tsp black pepper powder 1 tsp hing or asafoetida powder Salt to taste Water Method: 1. Kadhi

Kadhi is a traditional North Indian dish. It is a spicy yogurt based soup which usually contains fried besan pakoras and is eaten with rice or chappatis. Gujarati Kadhi differs from the north Indian variety as it is sweeter, eaten without pakoras and is a slightly thinner consistency. This variety of Kadhi is fat free and the only oil added is when preparing the tadka for the dish. Got this version of Kadhi from a friend (thanks Mayuresh) and tried it last night and it turned out to be quite tasty, even without the excessive use of oil or regular dahi (as opposed to fat free dahi which is used in this recipe).
