Paal (Milk) Pongal and Spicy Vegetable gravy

Happy Pongal and Happy New Year to you all !

Pongal is a harvest festival where Hindus give thanks to the Gods of Earth and Cattle. This festival is celebrated in South India and lasts for four days. Pongal gets its name from the Tamil word meaning "to boil". It is held in the month of January during the season when rice is harvested.

Pongal is usually either sweet or a spicy rice dish with each having their own versions. This recipe is my mother-in-law's version and is a huge favorite in our family. Thanks for both recipes Dipta! :) Enjoy this  Pongal recipe and the delicious vegetable gravy that goes with it !
