Mehak and Rahul's Grilled Vegetables and Paneer (Cottage Cheese)

Summer is here and with it comes out lemonade, watermelons, allergies (:P), beach balls, swimming suits and most importantly the Grill. We may not like all the above mentioned but the Grill is definitely a hit. An evening of grilling was planned and on the menu was grilled vegetables and paneer marinated in a spicy yogurt sauce, grilled eggplant, grilled pineapple and grilled black bean burgers, hashbrowns, Masala burgers and baked potato bites.

I am sharing a recipe by Mehak and Rahul, thanks guys for the deliciously grilled veggies and paneer on that day and for this recipe. The best part about grilling is that you can change the veggies being used and at the end of the day at your own touch to the recipe. Let the Summer begin !!!!

Serves: 4
Ingredients:
2 tomatoes 
2 onions 
2 bell peppers seeded 
12 oz pack of paneer 
2 cups yogurt 
1 tsp oregano (optional)
Salt to taste 

Method:
1. Mix yogurt and Shan paneer tikka masala. 
2. Cut paneer, tomato, green pepper, onions into big chunks so that it can be put on a skewer.
3. Put the cut veggies and paneer in the yogurt mixture for marination.
4. Let it stay for a few hours, preferably overnight.
5. Soak the skewers in water for about an hour.
6. Take a skewer and pierce the skewer through the center of each vegetable and paneer (in any order).
7. Place them on a tray and sprinkle a pinch of salt and oregano  (or any other spice/herb) according to taste.
8. Place skewers onto grill and cook  until golden brown, turn from time to time.
