Lemon Vermicelli

While on my last trip to India one of my Aunt's had made this dish for us and a family favorite was rekindled. Got back to the US and gave this a try for breakfast this morning and as expected it was a hit. Another version to this is adding green peas and bell peppers to this dish. This is a quick and easy recipe which is so delicious that even your kids will enjoy it. Enjoy :)

Serves: 3

2 cups vermicelli
5-6 green chillies chopped
½ tsp urad dal
½ tsp channa dal
¼ tsp turmeric powder
1/2 tsp mustard seeds
4 cups water
1 tbsp cashew
1/4 cup chopped cilantro
1/2 lime
Salt to taste


1.Place vermicelli in a microwaveable dish and microwave for two minutes
    2.Add water to a pan, add 1 tsp oil and bring it to a boil
    3.Add roasted vermicelli to water and cook for 5 minutes (or until cooked, test by pressing it between your fingers)
    4.Strain vermicelli and spread onto a plate
    5.Heat a low based pan and add oil 
    6.Add mustard seeds and when they splutter add channa dal, urad dal and cashews to saute until golden brown
    7.Add green chillies and saute
    8.Add turmeric, salt and saute
    9.Reduce heat and add vermicelli and mix well
   10.Add choped cilantro and mix well
   11.Taste vermicelli
   12.Add lime juice and if necessary add salt and mix well
