Trini / Cajun Style Red Bean Rice

Trinidadian cuisine is a mix of Indian and Creole food which gives it a unique flavour. Red Bean Rice is a popular Trini dish and is a balanced meal in one . It is enriched with protein. Bon Appetite :)


Serves: 5
Ingredients:
1/2 cup chopped celery
1 bell pepper chopped 
1 onion chopped 
4 cloves garlic 
4-5 green chillies (to taste)
1 tsp garam masala 
2-3 cloves 
1 bay leaf 
2 cups rice 
Oil 


Method:
1. Rinse and soak red beans in 4 cups of water for 6-7 hours (Tip: overnight). 
2. Drain water and add red beans into a pressure cooker.
3. Add enough water to cook the red beans, 2 cloves garlic peeled and slit, 2 green chillies slit, garam masala and cover and pressure cook for 3-4 whistles (cooked). 
4. Meanwhile, cook 2 cups of rice in the rice cooker.
5. Heat a pot on medium heat and add oil. 
6. Add 2-3 cloves, 1 bay leaf and when it starts to splutter add chopped onions and 2 garlic cloves chopped and saute until onions are transluent. 
7. Add chopped celery and bell peppers and cook . 
8. Add chopped green chillies and a pinch of salt and mix well. 
9. Strain red beans but keep the water. 
10. Add red beans in the pot and mix well. 
11. Add cooked rice and mix well, cook for 2 minutes. 
12. Add 1 cup of the red bean water and 2 cups of water and mix well. 
13. Taste and add salt if necessary and mix and cook for 5-8 minutes or until mixture thickens (Tip: should not become dry, add more water if necessary and keep stirring from time to time).
