Saurabh's Veggie Quesadilla

Quesadilla is a Mexican dish that is commonly made with either a cheese or meat filled into a tortilla. This recipe for Veggie Quesadilla which was given by Saurabh Saluja (thanks Saurabh) is a feast for a vegetarian. It is filled with protein and eaten with salsa, guacamole and corn. Enjoy this delicious Veggie Quesadilla :)

Ingredients for Black Beans:
1 14oz can of black beans 
1 small onion peeled and chopped 
1 clove of garlic 
1 finely chopped jalepeno
1 tomato chopped 
oil 


Method for Black Beans:
1. Heat oil in a pan. 
2. Add 1 clove of garlic and saute.
3. Add chopped onions and saute. 
4. Add chopped jalepeno and tomato and saute. 
5. Add can of beans into pan and mix well, add more water if necessary. 
6. Cook until beans come to a boil and are soft. 
7. Mash beans a bit in pan and add salt and mix well. 


Ingredients for Corn:
2 cups frozen corn 
1 tsp butter 
1.5 tsps cumin powder
chilli powder (to taste)
1 cerrano pepper chopped 
Salt (to taste)
Lime juice (to taste)
Cilantro (to taste)


Method for Corn: 
1. Heat butter in a pan.
2. Add cumin powder, chilli powder and cerrano pepper and saute. 
3. Add frozen corn and mix well and cook. 
4. Add salt, lime juice and cilantro and mix well and remove from heat. 


Ingredients for Veggie Quesadilla:
Flour and Wheat Tortilla 
Mexican blend cheese 
Salsa (store bought)
Sour cream (store bought)


Method for Veggie Quesadilla:
1. Heat a skillet. 
2. Put one tortilla onto skillet. 
3. Take a spoon of black beans and put onto half of the tortilla. 
4. Add cheese and fold the tortilla and wait for a few seconds for cheese to melt. 
5. Serve with salsa, corn and sour cream.
