Soya Chunks in a Tomato Gravy

This is tomato gojju but with a little twist. I added seasoned soya chunks to this recipe to increase the protein content in the dish and also because both my husband and I love soya chunks. What I love about soya chunks is that it soaks in all the delicious gravy around it and so once made right is bursting with flavor. Bon Appetite :)     

Ingredients:
3-4 tomatoes chopped 
1 tsp mustard seeds 
1 tbsp channa dal 
1 tbsp urad dal 
1 tbsp vegetable oil 
1/4 cup soya chunks 
1/4 cup curry leaves 
1 tbsp chilli powder (to taste)  
Salt to taste
     
Soya Seasoning:  
1/2 tsp chilli powder  
1/2 tsp dhania powder  
1/4 tsp cumin powder  
pinch of garam masala   
salt to taste   

Method: 
1. Bring 4 cups of water to a boil.   
2. Add soya chunks and remove from heat.   
3. After soya is cooked, strain and squeeze out extra water.   
4. Season with chilli powder, dhania powder, cumin powder, garam masala and salt.  
5.Take a non-stick pan and add oil. 
6. When oil is hot add mustard seeds. 
7. When the seeds start to splutter add urad dal and channa dal and fry until light brown. 
8. Add curry leaves and saute for 1 minute. 
9. Add chopped tomatoes and salt and cook for 5-6 minutes on medium flame or until almost cooked.
10. Add seasoned soya chunks and mix well. 
11. Add water and bring to a boil. 
12. Add chilli powder and mix. Taste and add salt and chilli powder if necessary.
  
Serve this dish with hot parathas or rice.

The first time I cooked with fresh curry leaves was in this recipe and I loved it!!!As a child my parents used to mix their own curry blend and would add roasted ground curry leaves to the mix thank you for taking me back to those memories of school vacations where we sourced and blended our own spices!!! We used to make our own cocoa blend too : )...enough of the nostalgia...this was yet another delicious recipe!!!!!!!!
