Sweet Corn Vegetable Soup

Here is another soup recipe to help you through all this cold weather we are getting. Sweet Corn Vegetable Soup is another Indo-Chinese style recipe. It is one of my favourites from back home. For all you corn lovers out there, this is the recipe for you. Enjoy this delicious and quick recipe. :)

Ingredients:
1 12 oz can of cream style corn
1 12 oz can of swanson vegetable broth
1 cup beans cut into bite size pieces
1 cup of carrots, corn and peas

1 cup celery
1 tsp ginger peeled and finely chopped
1 tsp garlic finely chopped
1 onion finely chopped
2 tsps corn flour
1/2 cup water
Salt to taste
Black Pepper to taste

Sugar to taste
2 spring onions chopped into diagonals


Method:
1. Place a pot on the stove and add oil.
2. While the pot is heating add the chopped ginger and garlic and saute for 30 seconds. (Don't wait until the oil is hot to a
dd the ginger and garlic).
3. Add chopped onions and saute for 30 seconds.
4. Add beans, peas, corn and carrots and celery and saute for 1-2 minutes.
5. Add salt and pepper and mix.
6. Add cream style corn and mix well.
7. Add vegetable stock and water and bring to a boil.
8. When the veggies are cooked (make sure they aren't overcooked), mix corn flour with a little water and add to the soup and mix well.
9. Add a pinch of sugar and mix well.

10.Taste and add more salt if necessary.
11. Garnish with the chopped spring onions and serve hot !!!
