Bengali Egg Curry

My good friend's (thanks Sylvi and Aunty) Mom showed me how to make this version of egg curry.It is one of my all time favorites. This recipe is for my old roomies who loved it every time I made it. Its a quick meal that can be eaten with chapatis or rice.Traditionally, the egg curry is adding the boiled egg into the masala.This recipe calls for something different, which you will see as you read on. Enjoy :)

Ingredients:
4-5 eggs
1 onion diced
2 tomatoes diced
1 tbsp Oil
1 tsp cumin powder
1 tsp garam masala
1 tsp dhania powder
1 tsp chilli powder
1 pinch of turmeric powder 


Method:
1.Heat a frying pan with a low base and add oil into it.
2.Add onions and fry until cooked.
3.Add tomatoes and salt and fry until cooked.
4.Add cumin powder, garam masala powder, dhania powder, chilli powder, haldi and stir until all the masalas are mixed and form a paste.
5.Add water and bring to a boil.
6.Take each egg and break into different sections of the pan as done for a sunny-side up egg. Cover until eggs are cooked, add more water if necessary.
