Grilled Anaheim Peppers

A few weekends ago, on a rainy day, my husband and I decided to make some comfort food for the gloomy weather. We made Grilled Anaheim peppers, Potato Bread Roll, Potato Bonda and Fried Anaheim peppers. The stuffing for each recipe was the same, seasoned mashed potatoes. This dish can be easily grilled on a grill during the summer. Enjoy this mouth watering appetizer with your favorite  chutney or ketchup :)

Serves: 2
Ingredients:
2 Anaheim Peppers
2 medium sized potatos
1 onion peeled and chopped 
2-3 green chillies chopped (to taste)
1/2 tsp cumin powder
1/2 tsp garam masala
1/2 tsp amchur powder
pinch chaat masala 
Salt to taste
Oil


Method:
1. Pressure cook potatoes. Remove from heat. 
2. Pour oil for frying into a wok and heat.
3. Peel and mash potatoes and add green chillies, onion, garam masala, cumin powder, amchur powder, chaat masala and salt and mix well. Taste and add more seasoning if necessary.
4. Take the anaheim peppers and slit it in the center.  
5. Take each pepper and cut in half. 
6. Stuff each pepper half with the seasoned potato. 
7. Take a frying pan and add 1-2 tbsps of oil. Heat on medium. 
8. Place each pepper half onto the pan and shallow fry until golden brown on each side.
